Yummy Treats: Mini Breakfast Quiches

For the last cooking lab of the school year in Foods & Nutrition, we made these yummy little breakfast quiches. They were absolutely amazing! I am pretty much at a loss on what to make for breakfast most of the time, so I thought this was an amazing idea, so I thought I'd share it with to guys. With this being the last cooking lab, this will be the last Yummy Treats post I got from school, unless I decide to add the ones I haven't added yet. Otherwise any recipes I put on here will be ones I came up with or found on my own. 

Mini Breakfast Quiches
What you will need: 
-2/3 cups shredded Colby Jack cheese
-1/3 cup finely chopped ham
-3 eggs
-2 tablespoons milk
-1/8 teaspoon pepper
-1 package refrigerated buttermilk biscuits



Directions:
1. Preheat oven to 350 degrees Fahrenheit (about 177 degrees Celsius). Combine cheese and ham in a small bowl. Beat eggs, milk, and pepper in a medium bowl until blended.
2. Separate biscuits; Press or roll into 5 inch rounds on a lightly floured surface. Grease the 10 outside muffin cups, and place one biscuit in each, leaving the 2 cups in the center empty. Press firmly to the bottom and at the sides of the cup, and form a rim at the top.
3. Spoon 2 tablespoons of ham and cheese mixture into each cup, pour in egg mixture, dividing evenly.
4. Bake in center of 350 degree oven until filling is set and biscuits are a deep golden brown, 20-25 minutes. Remove from pan and serve warm.

Yummy Treats: Nutella Lava Brownies (In A Mug)

I'm not really one to use the stove very often, as I'm somewhat afraid I'll burn the house down, LOL. Cooking with the stove also just seems to take forever. I prefer to use the microwave because it's quicker, and a little safer for me, haha! I've always known the microwave could heat up a frozen dinner, or warm up other foods, but I never knew that there were actual recipes for the microwave. Until my cooking class had us find and prepare a microwave recipe that we found online. OMG! Recipes that only require the microwave?! No cooking?!? YES! My group decided to make these absolutely yummy Nutella brownies. They turned out absolutely amazing, and I just loved the Nutella filling!

Nutella Lava Brownies
What You Will Need:
-4 tablespoons semisweet chocolate chips
-2 tablespoons butter
-1 egg
-4 tablespoons sugar
-2 tablespoons flour
-3 tablespoons Nutella
*This recipe makes two mugs. One for you and one for a friend!

Directions:
1. Get two microwave safe mugs. Put 1 tablespoon of butter and 2 tablespoons of chocolate chips in each mug. Microwave each mug separately for 40 seconds each. Remove and stir with a fork until chocolate is completely melted.
2. Add 2 tablespoons of sugar to each mug and stir. Beat egg in a small bowl and ass half two each mug and stir. Add 1 tablespoon of flour to each mug and mix until smooth. 
3. Add 1 1/2 tablespoons of Nutella to each mug, and try to center it. Allow it to sink on its own, do not mix.
4. Microwave each mug separately for 1 minute each. Serve while warm.

Yummy Treats: Chocolate Peanut Butter No Bake Cookies

I've heard of no bake pies, but not no bake cookies. I kind of thought all cookies had to be baked, LOL. So I was amazed today when we made chocolate peanut butter no bake cookies in Food and Nutrition. The recipe we were given made a lot of cookies, and it came out tasting so yummy! And best of all we didn't need to use the oven, LOL!

Chocolate Peanut Butter No Bake Cookies
What you will need:
-2 cups sugar
-4 tablespoons cocoa
-1 stick butter
-1/2 cup milk
-1 cup peanut butter
-1 tablespoon vanilla
-3 cups oatmeal
-Wax paper




Directions:
In a heavy saucepan bring sugar, cocoa, butter, and milk to a boil. Let boil for 1 minute then add peanut butter, vanilla, and oatmeal. (Remove from heat so you don't burn the oatmeal.) Drop mixture onto wax paper into even amounts. Let cool until hardened.

Yummy Treats: Veggie Pizza

I am loving my Foods & Nutrition class which gives us ideas on how to eat healthier and live healthier lives. I'm also loving learning new recipes and trying out new foods. From time to time, I'll share a couple of the recipes I get in this class with you. I really liked this veggie pizza we made, it's different from the typical veggie pizzas I've tried. It tastes really fresh, and I love the idea of using ranch as a pizza sauce. If you don't like one of the vegetables in this recipe, you can always leave it out. You may also switch out for different veggies such as olives and tomatoes, or anything you like. 

Veggie Pizza
What you will need:
-1 container of crescent rolls
-broccoli
-shredded carrots
-cauliflower
-green pepper
-shredded cheddar cheese
-ranch dip mix
-sour cream




Directions:
1. Preheat your oven to 375°F (190°C) 
2. Roll crescent dough onto a baking sheet. Pinch the edges together to hide creases and form pizza dough.
3. Put pizza crust in the oven and bake for 12 minutes
4. While the crust is baking, chop up all veggies into small pieces. You may use as much or as little as you want.
5. Once the crust is done baking, remove from the oven and allow to cool on baking sheet in the fridge for at least 10 minutes.
6. Mix ranch dip mix and sour cream.
7. Spread the ranch mix over cooled pizza crust.
8. Arrange veggies and cheese over sour cream.

No more baking needed! Enjoy! :)

Yummy Treats: Puppy Chow

At my school, the new semester doesn't start the first day we get back from winter break, we still have one week left of first semester classes. Many of my teachers have chosen to do fun and simple things for this week. In my creative cooking class, we decided to make one last thing before cleaning up the kitchens for the next semester, and it was so yummy I decided to share it with you guys. :) 

Puppy Chow
What you will need:
-9 cups Chex cereal (preferably plain)
-1 cup semi-sweet chocolate chips
-1/2 cup smooth peanut butter
-1/4 cup (1/2 stick) butter
-1 tsp vanilla
-1 1/2 cup powdered sugar 



Directions:
1. Measure out cereal in a large bowl and set aside
2. Put chocolate chips, peanut butter, and butter into a bowl and microwave for 1 minute
3. Stir chocolate mixture
4. Microwave for an extra 30 seconds or until smooth *be careful not to burn the chocolate*
5. Add vanilla
6. Pour mixture into cereal and stir until cereal is coated. Don't worry to much about breaking the cereal.
7. Put into a large Ziploc bag and add powdered sugar, seal the bag and shake well until cereal is coated with powdered sugar.
8. Spread out on wax paper to cool.
9. Store in Ziploc bags or in a large sealed container
